Founder of Happy Fork, Ron Pereira brings a portfolio of corporate and restaurant success stories.  Ron worked with several Charleston restaurant groups before moving into the food supply chain arena with Sysco Food Services where he was awarded internationally for developing creative marketing and procurement initiatives.  Ron’s vision for restaurant employees to have a superior quality of life and enjoy time with their families along with giving back to the community empowers Happy Fork in bringing employees and customers together while creating the ultimate working environment and customer dining experience.  Let’s just say, He gives a fork!

Danny Bokinac – VP of Client Services

As a former restaurant owner and business development manager for food service supply chain, Danny Bokinac understands the utmost importance of the customer experience when dining out.  Whether you’re looking for the best table side wine service or a quick bite for breakfast, Danny makes sure your experience at every Happy Fork location is a great one!

Edwin Florez – Director of Culinary Operations

From creative menu engineering to high volume kitchen management, Edwin Florez keeps the kitchen running.   Edwin has an extensive history from fine dining to your local oyster house, but more importantly he is the coach behind the scenes for all our culinary teams.  No matter what concept Happy Fork comes up with next, Edwin has the ability teach future culinarians to adapt and execute at the highest levels of performance.

Billy Garland – Regional Operations Manager

With 24 years of experience from Sodexo, one of the nation’s largest and best food service management companies, Billy Garland is able to unify all the different roles and aspects that restaurants employ.  Billy delivers an abundance of energy and excitement that keeps employees and customers smiling at every level.  Billy’s extensive management skills and expertise keep driving Happy Fork in upward momentum to succeed.

Lauren Thompson – Marketing Manager

As a University of South Carolina graduate and avid Gamecock supporter, Lauren Thompson brings Happy Fork over 15 years of successful Hospitality Marketing Management.  Lauren is also involved in several community programs such as the Midlands’ Leukemia and Lymphoma Society and the Stephen Siller Foundation’s Tunnel to Towers 5k.  She is always on the forefront of keeping our customers engaged through all our social media and marketing platforms while also coordinating Happy Fork’s event planning and catering services.

Chef Ed DeFelice - Corporate Executive Chef

Chef Ed DeFelice grew up in an Italian-American family where he learned two important lessons at an early age - that quality food is an essential ingredient to good living and that delicious recipes being handed down from generation to generation is a simple luxury that everyone can afford. As a child, Ed watched his relatives prepare culinary masterpieces from simple ingredients, often grown in the family's garden, that were steeped in Old World traditions. His parents were avid travelers and instilled in him the importance of experiencing the many diverse cuisines and cultures from around the world. He has spent time in Spain and Italy, extensively touring and learning about both countries, bringing away experiences that have greatly molded his culinary outlook.

Over the years he has worked in the New York Metropolitan area, where he held several positions with the most important as the kitchen manager for Anthony Franco's Ristorante Group. In the early 2000s, Ed decided to follow in his parent's footsteps and relocated to Aiken, SC to obtain his bachelor's degree at the University of South Carolina. Later, he joined the Willcox Hotel kitchen team, bringing with him more than ten years of professional cooking experience, a deep passion for culinary exploration, and a true love of creative culinary expression.

Anthony Kearse – Beverage Manager

Anthony Kearse was born in Crowley, LA and with a father in the Army he moved around a lot - he has lived everywhere from out west to overseas in Europe. He joins the Chophouse team with over 25 years of restaurant experience and has bartended in many night clubs, private bars and hotels in the Augusta, Charleston and Columbia areas. In his spare time, he loves to travel to new places with his longtime girlfriend, Abigail Mcculloch, and learn more about the upcoming trends within the industry. He has a strong passion for training new bartenders and teaching the younger generation the art of creating a great drinking experience. He enjoys giving back to his community in a manner where he knows once he's days behind the bar are over there will be a great group of bartenders to fill his shoes for years to come.

Mickie DeFelice – Corporate Executive Administrator

Mickie DeFelice joins the Happy Fork team with an extensive background in customer service from restaurant, hotel and corporate environment. As our Corporate Executive Administrator, she will ensure that all corporate policies and procedures are adhered to, will handle all financial matters of business and will approach all aspects of the job with a positive, hard-working mindset as she has a passion for helping find solutions to any challenge. She is excited to bring her experience and enthusiasm to our team.
